  1. Thought I would share my recipe for stuffed venison backstrap that I came up with by basically stuffing venison with spinach salad recipe from Lampy's restaurant in Endicott. Id also like to hear everyone else's favorites as we all tend to make the same recipes over and over and Im ready for something new to try. I cook pretty much by eye and dont measure much but you will get the gist. Stuffed Venison Loin Ingredients 1 whole, well trimmed backstrap fresh baby spinach small bag of dried cherries chopped walnuts small container of crumbly bleu cheese 3-4 pieces of bacon balsamic vinegar minced garlic grated parmesan cheese Salt n Pepper Toothpicks or halved bamboo skewers (what I use now) First roll out the loin by slicing lengthwise a three quarter inch thick slice stopping 3/4 of an inch from the cutting board. Then roll loin 90 degrees and repeat till you have wide 3/4 inch thick piece of meat. Sprinkle meat with balsamic and put in fridge for a quick marinade while you make the stuffing Cut up spinach, bacon, and garlic. Mix spinach, cherries, walnuts, crumbly bleu, bacon pieces, garlic, and parmesan cheese Salt and pepper meat to taste then spread enough stuffing that when you roll the venison it just nicely closes Insert toothpicks to hold it closed I then smoke grill with hickory chips on the top rack of my infrared grill at around 250-300 degrees till rare on a meat thermometer. As long as it is slow cooked somehow it will work...this is just my favorite way. Let it stand covered off heat till medium rare then slice. This is considered a delicacy with all our friends and family and I serve it as an appetizer for prime rib I smoke grill on the main grill under the venison...and of course passed the true test which is when people who dont like venison get seconds. Also this is one of the few recipes I prefer with venison over pork or beef though both work well. I posted a pic of it last year right after christmas somewhere here I think. Hope you enjoy!
  2. Was just curious as reading Kevin's posts brought back fond memories of hunting up that way. We still have land up there, but I just dont get up there between the lake and hunting here. The problem with our deer season is it opens so early that there is no time for small game hunting. I love running dogs, but I wont do it with deer hunters afield. If the deer population continues to grow where our place is i would definitely love to spend more time there in the big woods where i could still hunt and get out of the treestands.
  3. I agree with the support local small buisness. Just remember the evil big stores were small local stores we made into big chains. I live across the river from DICK'S Store #1....my son works part-time at Dicks store # 2 so invariably we get most of our stuff there IF they have it...the 25% (35% on family night) off is hard to pass up.
  4. I agree with letting them grow, but it takes time to change things. Much of NY isnt like you are describing with excess does and lots of deer. You have to understand that to many people getting ANY deer is an accomplishment. Also you cant shoot 5 does everywhere...in fact some areas you cant shoot any. There are whole lot of gun only hunters out there who legally can only shoot 1 doe or no does. Plus unlike you many hunters grew up in a time when the general practice was to NOT shoot does and only shoot bucks to ensure survival. Again I agree with the antler restrictions, but be patient. It sounds like you and your brother have plenty of good deer and you owe that to those who came before you shooting only bucks.
  5. In my experience (prior to this year) there isnt much deep emergent growth on oneida due to algae bloom and water clarity. Jeff, How much light were you reading on your probe this summer/fall. If im wrong I stand corrected...Ive just never had that problem on oneida or otisco.
  6. There arent many weeds on the bottom in 25+ fow. I wouldnt troll shallow enough to have weeds unless I had too, and you dont there unless its dark. Plenty of fish in the deep water on Oneida. Once fish are shallower than about 14-15 fow I cast for em. You just have to work through em.
  7. The biggest change for me happened when I stopped trying to learn to kill whitetails and was forced to teach. My son Cody is 22 now and my exwife did me a huge favor when he was 26 months old and told me I couldnt leave him with her to hunt. She felt it wasnt fair to be stuck with him. The next morning he started going with me. I converted an old frame pack into child carrier and converted my old osha harness into a child safety harness to pull him up into the tree. I didnt take long and that first season he started staying out from dark to dark with me. Ever since then I realized I enjoyed watching others experience the outdoors as much as I enjoyed it myself. Not too many 22 year olds with 20 years experience. My 19 year old daughter has gone with me fishing and hunting, but rarely...maybe someday...not with this current boyfriend around tho!
  8. We used to go every year to a state pheasant release area up your way Kevin. It was on 812 just north of New Breman. Do you know of it and if the state releases birds there still? Good luck tomorrow!
  9. By weed guards I mean anything that will keep weeds from sliding down your line. A simple rubber band would probably work. Eventually you still have to run your lines as the weeds will create to much drag, but at least you have some confidence that the weeds arent on the lure. I use the snap weight clips without the weight just in front of my set back when trolling big boards to keep floating weeds from sliding down the line and fouling lures. You can thread a bead on your mainline before tying on your barrel swivel and that too will keep weeds off the lure, but you will lose diving depth. If you use inlines the weeds collect on your boards and lures stay clear. When flat lining if the rod tip is in the water the tip collects the weeds. If you run riggers your lures should be clear as the weeds collect on the cable and down line. I even lay lines with the tip in the water sometimes if its bad so i know im clear when i put on the "weed guard", board, or attach to the downrigger release. If the lake is clear I dont bother. Hope this helps clarify what I mean.
  10. Joe, I too was 90% hunting 10% fishing, but with less land to hunt and the freedom buying a boat gave me over a canoe I too have flipped to 60 40 in favor of fishing. Plus after 30 years of eating venison as my main protein I prefer walleye! A good use of leftover venison is jerky for hunting season. This year Im gonna try to make enough jerky after deer season to have it on the boat during fishing season, but Ive never been able to have extra after coyote season. My son can eat jerky faster than I can make it.

I can think of a 100 things we hunters waste money on from soaps to calls to camo patterns (i have most of the junk), but then I see the same guys go cheap on guns. scopes, and ammo or bows, sights , arrows, and broadheads. Id give up everything else before id give up accuracy and dependability.
  12. Jeff, I always had the best groupings out of my remington rifled barrel with the copper solids. That being said my first barrel wouldnt shoot (like I wanted) and Remington gave me a new one and bingo. My barrel doesnt like fast slugs unfortunately. Of course that was 20 years ago, but I wouldnt settle with your barrel if you cant find a load...2" at 75 yds isnt great...i have a smoothbore that will do that easily. Every barrel is different...
  13. Welcome Sean! Im on Otisco and I love my fishing toon! Mine is probably the only 1 with a rocket launcher, masts, riggers, and of course casting deck with a terrova.

  17. I agree, but we all have to eat anyway right? Sure I prefer beef, but I doubt the farm I hunt on would appreciate that! We had beef on the farm, but that was marketable. I would think with so many health conscious people more would WANT venison and fish too for that matter. I cant seem to get hunting and fishing without eating the catch. I have a tradition that the backstraps from the most mature whitetail buck killed in our family are stuffed and smoked for appetizers for the christmas prime rib dinner along with walleye scallops. This is two fold as the more fish and venison that everyone eats the more prime rib for me! Of course beef is a treat for me and everyone else thinks the appetizers are the treat.

  19. Joe, I gently brake every cast I make also in order to ensure the lure is flying away from the line in much the same way you cast a baitcaster. When my lure hits the water my line is nearly tight. Then I lift the tip till I feel the lure before I reel. This will keep that light line from getting loops in the spool. I still think practicing all of this in the light is the answer. I really cant begin to tell you how many night fishing issues I see with the many people I take out at night. All of these things are avoidable if you have a good technique that you can do blindfolded. Obviously the better you can cast the less need there is for braking. I also tie a short piece of flouro leader, not line, to my mainline and tie direct to the lure with no swivel or crosslock snap. I find it easy to teach women as they listen...most guys already know what they are doing...but they dont!!!!!!!!!!!!!!
  20. Ive had several cameras go bad and have sent them back even if they were 2-3 years old. All but 1 they fixed or replaced. Give it a try...cant hurt.
  21. Last night I found myself thinking about what Im going do to do differently this year to try to glean a shot at the deer Im now hunting for the third straight year. It got me thinking about how I got started and why I hunt. When I think back to how I was raised I realize NOBODY I knew then ever passed up a good opportunity to kill a buck. Doe permits were hard to come by needing up to 3 party members and we hunted for the meat first and foremost. Nobody hunted out of treestands then and posted property was rare. Everybody either did a combination of still hunting and sitting or drove deer. We had to milk cows before and after hunting so dawn and dusk were times we didnt hunt. We still kept "trophies", but it was very rare to kill a mature buck. Now it seems that many hunt for the antlers not the meat. Proof of this is the number of kills that are donated. When I started I cant imagine anyone giving away their entire kill. I still hunt for the meat first and foremost, but the does provide that and I choose the challenge of pursuing mature bucks. I really cant completely control or manage the property we hunt so a true trophy class whitetail isnt a reality, but I go after the best of what I have to hunt. I wondered how others feel about the shift to trophy hunting and all the gear we use to achieve our goals. Im not interested in arguing about the trophy issue and believe its up to the individual just wanted to hear your thoughts. I think Im getting old because I miss the way it was....the hunting is far easier today and the quality of bucks is improving yearly, both good things, but the family aspect and heritage of hunting seems to be fading though not in my family!
