Make sure your ev1 sensor/ compass is secure and properly aligned and all your cable connections are good. The ev1 also has an led that should be green under normal conditions. You could also try doing a factory reset if everything looks ok. You will have to go through the dockside wizard and sea trial set up of it again though. Don't have the TR-1 as I also have an ev 100 on my boat. The Raymarine evolution series is designed for boats with hydraulic steering. I have always heard guys speak very highly of the TR-1 though. Hodges marine has it for $2048 and the remote is pictured with it. It is possible that garmin sells a kit without the remote at a different price. X2 on this exact set up. The sams release is adjustable enough so it doesnt false release under those conditions. A decent king will surely pop it open though. Between the sams release opening and your drag loosened, the board should stay on top of the water. Just let the fish take line and fall back behind your other lines(boards or divers) to the middle before working him in. Big boards on my little boat were a pain so i switched to inlines. Took a buddy and his son out yesterday. His second trip and his boys first. Setup on a NE troll in 100ft of water. Kept the spread simple as i am new to the sport myself. 2 riggers, 1 wire dipsy, and my first time using copper....a 300ft rig on an offshore mag inline board.
First hour just a few little shakers. I figured we had another one when I saw one of the rigger rod tips twitching so I hopped up, grabbed the rod and tried to release the line from the weight. At about the same time I figured out I was pulling on the fish, the fish figured out it was hooked. Good one on! Handed the rod over to my buddy as the fish took off. He finally slowed down 300+ feet later and dad and son worked together to get him in. Solid fish, checked in a tick over 19lbs.
Landed a 17 lb on the copper, a couple more shakers, and lost 2 good ones in the prop wash. Most action between 140-160 ft and 50-80 feet down. Moonshine and Stinger spoons. Fished 6:00-10:00 but the bite turned off by about 9:00. Fleas were getting bad by the time we started pulling rods. Didn't see many other boats.....maybe others went out deep?

As far as determining hard over time, per the Raymarine forum I centered the rudder, then hooked the motor/drive leads up directly to 12 volts to drive the rudder to one side. Reverse the leads and drive the rudder all the way to the other side while keeping track of how many seconds it takes. I'd post the link, but don't know how to on this site.....sorry.
