I have used dexter knives to butcher deer for many years and have a bunch of them.  Highly recommend the ones with the rubbery grips as well as their skinning knife.  Lots of value with this brand and are true commercial grade.

In the butcher block on the island in our kitchen...hahaha

No seriously, just google round knife sharpener and they should pop up.

5/32" Chainsaw file will do the trick, then use the steel shown above to take the burr off the back side.
