I cut my fillets to length, then pull the pin bones with a set of needlenose. Some guys just cut a 1" strip out of it to remove the bones.

How do you get the stupid bones out of your salmon/steelhead fillets?

I saw a gourmet chef at a demonstration do it just like Muskybob said. He used pliers and pulled each one out individually. It only took a couple of minutes but there were no bones and he didn't waste any meat.

My son IS a trained chef and he told me years ago to pull them. Can't remember how many per fillet, but been pulling them ever since. Good knurled tips on the needlenose help.
