Looking for a good brine recipe for smoking. Haven't smoked salmon in a couple years and lost a good recipe . Lost recicpe had garlic powder / salt ,onion etc. Torn the house apart looking for it. If any one has a recipe like this i would appreciate it if you could post it . Thanks

try this,

1 qt. white wine,

1 qt. water

1 small bottle of soy sauce

as much non iodized salt as your taste buds call for

1 cup brown sugar

any other spices you care to enter

24 hrs completly covered

remove from brine, let dry at room temp

smoke over your pick,ie. apple, hickory, cherry.

best to use green wood

sprinkle brown sugar over fish on occasions while smoking

enjoy

For a more moist fillet, try this:

Adirondack Smoked Salmon

From the Adirondack Series by MuskyBob

2 Tbs. Garlic Powder

2 Tbs. Kosher or Sea Salt

1 Tbs. Cayenne Pepper

1 Cup Brown Sugar

64 Oz. Apple Juice or cider

1/2 Cup Soy Sauce

1/2 Cup of Maple Syrup

Rinse fish and place in brine for 24 hrs. Remove and rinse once and set aside to dry, or pat dry with a paper towel to speed it up a bit. Allow a pelicle to form (dry shiny surface). Place in smoker and smoke for approx. 3.5 hrs. Allow to cool, package in vaccum sealer bags, freeze till you want some. Delicious!!!

This is enough brine for 3 racks of fish in my Brinkman.

HI,

1 gal water

1lb kosher salt

6 oz dark brown sugar

1/2 tbs liquid garlic

1/2 tbs liquid onion

3 oz lemon juice

Fish with skin on

marinate 5 hrs.

rinse with clear water

This is 1/4 the original Recipe.For up to 50 lbs of fish .
