Those who like things simple will like this one:

Fillet out a nice coho, remove skin n' bones

slice the fillets the long way & then in half and put in a zip lock bag

shake up a jar of Dinosaur Grill 'Mojito' and pour a goodly amount in n' over the fish

Squeeze the air & mix the marinade well into the fish, leave em in there most of the day

I find that a gas grill w/ plenty of BTUs turned up to 2/3 works best to sear the fish

I rotate the fillets to keep them cooking evenly. DON'T OVERCOOK!!

serve w/ sweet corn and dirty rice.

forgot to add that another nice variation on this theme is to use Peppercorn Parmesan Ranch dressing instead of the Mojito. Actually, on more delicate fish like a FLX atlantic, I prefer the white sauce.
