Take your favorite LL /Bow or Brown. Just gut it leaving head and tail on. Once completely clean set aside.

Next your stuffing.

Fix your favorite stuffing mix with just about enough to fill the entire cavity of the fish. We add imitation seafood or baby shrimp or diced clams whatever you prefer. Mix it all together using 1/2 the recommended water and the other half spedie marinade. We like the southwest marinade for a bit of a zing. Mix it together so it moist but not soupy. Fill the entire cavity and let it over flow out. Lay sliced tomato or salsa over the entire top side of the fish Wrap the fish with stuffing in aluminum foil and throw iron the grill until done. And flip once. We cut it just like salmon steaks and serve.

Don't be afraid to get creative with what you mix with the stuffing.
