Twin Screw Trolling Questions

I just bought my first twin screw and I love the boat but just realized I have a lot to learn about them. If like I just moved from a scooter to a semi-truck

Can anyone give me any advice on using them for trolling?

Do you use just one motor? A trolling bag? Do you steer with the wheel while trolling?

We run a bag even if we don't have to for a couple reasons:

 

*Bump the RPMs up while trolling

*It'll keep your rudders straighter, and help you AP out.
