I was fortunate to have someone take me out fishing for gills this spring and while a lot of us take it for granted,  The difference between a few and a lot is dependent on presentation.  I have since started playing around with it more and it has taken me back to my youth.  Unlike my youth,  I kept some instead of releasing them back.  I am getting a taste for them.  A lot of work but very good.  I figure that since the bass have not set up in a summer pattern yet that I will play around with the pan fish for awhile.

 

I like making fish sticks out of them.  I cook the lower and back half with heavy spice and eat it with vegetables and save the backs for frying (fish sticks).  I like fish sticks, and no, I am not a gay fish.

Thanks Dan.  I look back at all of those gorgeous slabs I let go as a kid and wonder how it ever got missed that they would make an excellent dinner.
