On my boat soon as you let go of the steering turn right hard what to do to fix it

Sounds torque from spin of prop. Dont let go of wheel

If I try to go net fish or something have to do it fast and get back to steering wheel so nothing gets gangled

That's what we did in our first boat. Not perfect but prevents circles.

Maybe torque steer which would tend to make the engine turn to one side. Trim tab adjustment would compensate for torque steer.

Do you have a trim anode on the bottom of your lower end ? My merc has it. Need to loosen bolt and turn anode toward side that pulls

No feedback helm, it will slightly increase steering effort but worth the money in my opinion.
