Gunwales

Wondering what people put on the inside stern of there boats behind the dog house. I am in the process of rebuilding the dog house and gunwales on my boat but am stuck for ideas for the stern. The gunwales and dog house were framed out and covered with plywood than covered with the infamous Flex seal roll on white paint. To my surprise came out extremely nice looking. Did not want to fiber glass but wanted to protect the wood. Anyway the stern section of my boat meets the gunwales sides in a curve and plywood won't make the bend. Any input appreciated thanks. Want to cover up all the wires and fuel lines and vent tubes to protect them and also for esthetics. Thanks.

Was thinking about maybe building a frame and useing house hold vinyl soffit to cover it up. Would breath that way and fairly flexible. Thanks.
