I've used your recipe several times and everybody wants me to smoke more salmon

 

only problem is keeping the 14 Cats away from the smoker!

While cooking I brush on maple syrup, with the same exact brine. I like to use hickory and apple over charcoal but that's a long day of tending the fire.

The only thing I do different is I use 1 gallon of water plus I add 1 gallon of apple cider. I use this same recipe on my smoked chickens plus I add Granny Smith apples to stuff the chickens cavity, adds some extra flavor. I use sassafras to smoke with, I only add smoke for an hour. Some recipes are a cold smoke where others use heat to get the job done!!
