Took 50 lbs. of goose to Miller's to be made into slim Jim's, jalapeño/ cheese sticks and summer sausage.

Having my buck butchered and making a bunch into dried Italian salami, dried Pepperoni, venison bacon, country little links, hotdogs, moser sausage, and maybe some BBQ.

I've already made breakfast sausage, Italian sausage and chorizo.

Think I'll have about 115 lbs of various sausages, as welll as steaks, loins, tenderloins, sirloin tips, etc. Guess I'll have plenty to share with family at Christmas, and also with friends and farmers.
