Over the past few days I was able to get the boat done. I'm happy with how it turned out. If it doesn't rain next weekend, I'll get the first hours of the season on her.

Thank you everyone for the kind words. I really enjoyed this project. I have never done any apholstry or layed vinyl before but have alot of other skills. I learned alot very quickly, but it came out great. Now if the wife would let me buy another boat to do this too, I'd do it again in a heartbeat. Not likely though haha

Was the stainless steel trim at the floor / wall  and top of the panels original to the boat?

Yes it was. It wasnt in too bad of shape. I straightened a few of the dings out of it and used a buffing pad on a drill and some polish to clean it up.
